STEAK FAJITA SALAD

Ingredients for steak marinade:

  • 1 # steak

  • 1 T olive oil

  • 1/2 cup orange juice

  • 1/2 cup pineapple juice

  • 1/2 bunch cilantro

  • 2 cloves garlic, minced

  • 1/2 t cumin

  • 1/2 t crushed red pepper flakes

  • 1 t chili powder

  • 1/4 t cayenne

  • 1/2 t paprika

  • 1/2 t onion powder

Ingredients for Salad:

  • 1 bell pepper

  • 1 jalapeno pepper

  • 6 cups of your favorite greens (I typically do a combination of baby spinach, romaine, baby butter, and arugula)

  • 1 onion (I generally do green and red onions)

    Avacados, cilantro, limes, and shredded cheese for serving.

Instructions

Marinate meat for a minimum of 2 hours. Grill to your liking. While the meat rests, make you salad by slicing and chopping to your liking. When the meat has rested, slice thinly on a bias and serve atop the salad. Serve your fajita salad with avocado dressing, ranch dressing, or your favorite vinegarette.

NOTE: This recipe also works well with boneless chicken.
