STEAK FAJITA SALAD
Ingredients for steak marinade:
1 # steak
1 T olive oil
1/2 cup orange juice
1/2 cup pineapple juice
1/2 bunch cilantro
2 cloves garlic, minced
1/2 t cumin
1/2 t crushed red pepper flakes
1 t chili powder
1/4 t cayenne
1/2 t paprika
1/2 t onion powder
Ingredients for Salad:
1 bell pepper
1 jalapeno pepper
6 cups of your favorite greens (I typically do a combination of baby spinach, romaine, baby butter, and arugula)
1 onion (I generally do green and red onions)
Avacados, cilantro, limes, and shredded cheese for serving.
Instructions
Marinate meat for a minimum of 2 hours. Grill to your liking. While the meat rests, make you salad by slicing and chopping to your liking. When the meat has rested, slice thinly on a bias and serve atop the salad. Serve your fajita salad with avocado dressing, ranch dressing, or your favorite vinegarette.
NOTE: This recipe also works well with boneless chicken.
