VEGGIE CHILI
1 T olive oil
2 cloves garlic, minced
1 large onion, diced
1 bell pepper, diced
1 jalapeno, diced
1 T chili powder
1 T paprika
2 t cumin
2 t onion powder
1 can fire roasted diced tomatoes
1 can tomato sauce
1 can tomato paste
2 T chili peppers in adobe sauce, diced
3 cans black beans
3 cups vegetable or beef broth
1 cup lentils
Instructions
Saute onions, bell pepper, and jalapeño in olive oil and a pinch of salt. Add the garlic and sauté until fragrant. Add the rest of the ingredients and simmer 7-10 minutes until the lentils are tender.
Serve with sour cream, shredded cheese, cilantro, diced green onions, avacado. Enjoy y’all!
