MAMACITA’S TACOS

INGREDIENTS

  • 1 medium onion, diced

  • 1 T olive oil

  • 1 clove minced garlic

  • 2# 93/7 ground beef

  • 1 T Mamacita’s Taco Seasoning Mix

  • 2 T gluten free flour mix (I like Bob’s Red Mill)

  • Water as needed

  1. Cook onion in olive oil until translucent. Add garlic and cook until fragrant.

  2. Brown beef until crispy brown. If it isn’t a little crispy, you won’t have much flavor. You don’t have to brown it, but you should have some brown bits that needs to be deglazed. Meat shouldn’t be too greasy if you buy 93/7, but if it has too much grease for you, now is the time to drain it.

  3. Season meat with the one seasoning mix, cook for one minute.

  4. Deglaze pan with 2-4 T water. Scrape all the yummy bits off the bottom of the pan. Dust the 2 T gluten free flour into the meat, and cook 1 more minute.

Notes: My favorite way to serve tacos is in Siete brand shells or tortillas. I also like to top my taco with shredded whits cheddar cheese, spicy brown mustard, shredded green cabbage, fresh minced jalapeños, minced red onion, sour cream, and Valentino sauce.
